Use Flora Danica or Mesophile Aroma Type B culture to make cultured butter and many other delicious items . Any butter with mix-ins such as herbs, fancy salts or spices, cinnamon, honey, etc is considered a compound butter. I don't use buttermilk, but I do leave the cream sit out overnight with a handkerchief secured to the top of the jar. Well, I decided to live on the wild side with mine and just scrubbed it good with hot, soapy water… I know that’s probably not really “deep cleaning” it, but no one has died yet from my butter.

You can also use chilled cream, it will just take a little bit longer to churn the cream into butter. I've been using a silicon spatula to press it back and forth and smoosh it around to get the water out but I can still see the milky water in the butter after it's been in the refrigerator. Today, some butter presses no longer have a design on the bottom, but they serve the purpose of shaping homemade butter into a perfect block. I have also used an ice cream maker but still had to start with whipped cream then put it in there and voila, butter.
